Potato Cheese Soup

My version, inspired by Grandma and Mom.
(no exact science here)

3-4 stalks celery, diced
1-2 small onions, diced
2-3 Tbsp. butter / olive oil
6-7 small-medium russett potatoes, diced
Scant quart chicken broth / veg. broth / water
salt, celery salt, pepper
1/4 - 1/2 cup milk
1/4 - 1/2 cup sour cream
1/4 - 1/2 cup grated cheddar cheese
Oyster crackers

Saute onions and celery slowly in fat until softened. Add potatoes and enough liquid just to cover them. Cook until potatoes are soft. Add seasoning. Remove from heat and add milk, sour cream, and cheese and stir until mixed. Serve with crackers and love.
